Chicken & Cauli Pie

Delicious, simple and something the entire family could enjoy. I made a big portion of this that fed my husband for supper and divided up the remaining amount into single servings for my son.

The mash is a smart way to sneak in the less preferred veggies like cauliflower or even broccoli, with sweet root vegetables. You can get as creative as you want with mixing and matching different veggie combos.

*What you’ll need 

Mince filling:

  • 500g chicken mince (you could use beef for this recipe if you prefer)
  • 1 onion diced
  • 1 Tbs olive oil
  • 1 tsp chopped garlic
  • 2 large tomatoes diced
  • 1 large sweet red pepper, finely diced
  • 1 Tbs parsley, chopped finely
  • 1 tsp thyme
  • 1 tsp oregano
  • 1/4 cup boiling water
  • 2 Tbs tomato paste
  • Black pepper (1-2 cracks)

Mash:

  • 1/2 tsp nutmeg
  • 1 cauliflower cut into florets
  • 2 large sweet potatoes, peeled and chopped
  • 3 Tbs olive oil

Method:

  • Preheat the over to 180°
  • Heat the olive oil in a frying pan on a medium-high heat
  • Add the onion and fry until glassy
  • Add the garlic, thyme and oregano and continue frying for a further minute
  • Add the chicken mince, chopped tomatoes and the chopped red pepper
  • Fry for 5-7 minutes
  • Add the hot water, tomato paste and the black pepper
  • Turn up the heat until the mixture begins bubbling
  • Turn the heat down and allow the mixture to simmer for a further 5 minutes
  • Remove from the heat, set aside and sprinkle parsley into the mixture
  • Steam the cauliflower florets for 5minutes and the sweet potatoes for 8-10 minutes (or until soft).
  • Combine the cauliflower, sweet potato, nutmeg and olive oil
  • Using a hand blender or a food processor blend into a fine consistency
  • To assemble, place the mince mixture in an ovenproof dish, top with the mash and a sprinkle of parmesan cheese.
  • Bake for 15 minutes

This makes 10-12 portions which can be frozen and then thawed in the refrigerator over night.
